Our client, Legros & Motti Classic European Kitchen, is currently seeking a talented and results-oriented Sous Chef to join their exciting world-class team in St. John’s, Newfoundland. The successful candidate will supervise the staff of the kitchen, participating in the training and development of staff and also provides input for performance appraisals and disciplinary action. He/she will manage a world-class kitchen in compliance with all health and safety regulations by ensuring adherence to sanitary and safe food handling guidelines at all times.

Responsibilities
• Ensure consistent food preparation and the highest caliber of food presentation, taking advantage of all opportunities to improve upon both 
• Ensure cleanliness and hygiene is maintained in the various kitchen areas including refrigerators and storerooms and that food products are rotated to ensure high standards of freshness. 
• Aid the Executive Chef in ordering and inventory of food products for the preparation and operation 
• Aid the Executive Chef in creating, implementing, and maintaining department objectives and to ensure they are met and exceeded. 
• Ensure that the morale of the kitchen staff is maintained by practicing positive strategies to motivate staff, encourage self-esteem and efficiency. 
• Prepare weekly staff schedules, and monitor staffing levels in conjunction with determined budgets. 
• Continually seek opportunities to increase food revenue, decrease kitchen expenses and maximize departmental productivity without compromising our guests’ satisfaction. 
• Carry out other related duties which may be assigned from time to time. 
• Ensure the proper use of scales and measurements in all recipes, portioning, and food production by both yourself and the staff under your direct supervision.

Qualifications
• High School Diploma or equivalent required. 
• Culinary Education Trade Papers, Red Seal or Equivalent (equivalencies of academic training and practical work experience will be considered) 
• Food Safe Certification 
• Exceptional interpersonal, problem-solving, and decision making skills with a key ability to build long-lasting relationships 
• Ability to lift 50 lbs required. 
• Flexibility to work overtime as required. 
• Minimum of 3 years’ experience in a managerial role, Sous Chef position or higher in a high volume upscale casual environment 
• Minimum of 5 years’ combined experience in the trade of cook. 
• Extensive knowledge of food handling and sanitation standards.
• Understanding of maintenance of kitchen equipment. 
• Self-motivated, with a positive attitude and a consistent display of professionalism.
